Reports to: Kitchen Manager 
The scullion’s primary objective is to provide a clean and safe kitchen area at all times.   Wash clean and sanitize all floors, walls, tableware, pots, pans and cooking equipment. Keep the dining area dish areas and equipment clean and organized.


CHARACTERISTIC DUTIES AND RESPONSIBILITIES
Assumes 100% responsibility for the cleanliness of dishware
Load, run and unload dish machine (if applicable)
Keep the dish pit clean and report any functional or mechanical problems to the Kitchen Supervisor immediately.
Monitor dish pit water temperature and chemical levels to ensure sanitary washing.
Wash and store all tableware and kitchenware.

Load or unload trucks that deliver or pick up food or supplies.
Aid in the completion of opening and closing checklists.
Maintain adequate levels of clean tableware for dining room and kitchen
Bag and haul kitchen trash to dumpster.
Conduct routine cleaning maintenance to prevent dust, mould, odours, corrosion and to ensure equipment are in excellent working order, safe, sanitary and presentable when use is required.
Closes the kitchen properly and follows the closing checklist for kitchen stations – assists others in closing the kitchen.
Maintains a customer focus while performing duties
Performs any other related duties as assigned by the Kitchen Supervisor or Dining Room Supervisor.

Education, Qualifications & Experiences : -
There are no formal education requirements, although some  sort of background or education in groundskeeping, horticulture or agriculture is favourable. More specific training will be done on-the-job.
The minimum qualifications necessary for acceptable (satisfactory) job performance are:-
• Must possess a positive attitude and work well with other team members
• Must be able to communicate clearly with managers, kitchen and dining room personnel.
• Must possess a valid Food Handlers permit
• Be able to work in hot/cold, wet, humid and loud environment for long periods of time and lift at least 50 pounds
Performs any combination of tasks involved in cleaning the grounds, beachfront, kitchen and stores. Cleans pots and pans, dishes, chopping blocks, and service stations, by hand or using dishwashing machine. Polishes silver chafing dishes and coffee pots. Places washed glasses in rack to prevent breakage. Defrosts and cleans reefers and iceboxes. Cleans and culls vegetables and fruits. 
Self-Motivation: Scullions work by themselves, so must be able to stay focused and get the job done.Stamina: Scullions work in all kinds of weather, and spend most of their day on their feet washing, cleaning and doing demanding physical labor.
 Grounds maintenance duties usually consist of up keeping lawns, trees, shrubs, flowerbeds and other landscaping elements, keeping the beachfront clean and free of debris. Workers may also tend to the seasonal needs of walkways and parking lots, as well as site-specific structures like tanks, seating areas, fences and buildings.
